Calibrating a Thermometer With Ice and Boiling Water (2026)

At the start of every season, after any drop, and any time a reading looks wrong10 minutes

Two reference points exist that you can reproduce in any kitchen without equipment: the freezing point and the boiling point of water. Between them they tell you whether a thermometer is accurate at the low end, the high end, or neither — and the whole test takes about ten minutes.

What you need

  • A tall glass and a saucepan
  • Plenty of ice
  • Cold water
  • A note of your elevation above sea level

The routine, step by step

  1. Build a proper ice slurry, not a glass of iced water

    Fill a tall glass completely with crushed ice — packed, not loose — then add cold water until it just reaches the top of the ice and stir. The glass should be mostly ice with water filling the gaps. A glass of water with a few cubes floating in it sits well above freezing and will give you a false pass.

  2. Let it equilibrate, then read it

    Stir and wait two minutes. Insert the probe into the center of the slurry without touching the sides or the bottom, stir gently with the probe, and wait for the reading to settle. It should read 32°F (0°C). Elevation does not affect the freezing point, so this reference is the same anywhere.

  3. Bring water to a full rolling boil

    A rolling boil, not a simmer with a few bubbles. Suspend the probe in the middle of the water, away from the bottom of the pan, which runs hotter than the water itself.

  4. Correct the boiling reference for your altitude

    Water boils at 212°F at sea level and roughly 1°F lower for every 500 feet of elevation. At 2,000 feet the correct reading is about 208°F, at 5,000 feet about 202°F. Look your elevation up once and write the figure on a label on the thermometer case.

  5. Interpret the two results together

    Both readings correct means the thermometer is good across the range. Both off by the same amount means a consistent offset you can correct. One correct and one off means the sensor is non-linear and the unit should be replaced — that is not something you can compensate for reliably.

  6. Adjust, or record the offset

    Many digital instant-reads have a calibration button that sets an offset in the ice bath. Analog dial thermometers usually have a hex nut under the dial that you hold with pliers while turning the dial face to 32°F. If the model has neither, write the error on a piece of tape on the body and apply it mentally every time.

  7. Retest anything that has been dropped

    A fall onto a hard floor is the most common cause of a thermometer going out of true, and the damage is invisible. Any drop, any dishwasher accident, any probe that has been left in a 500°F grill — retest before trusting it on poultry.

Common mistakes

  • Testing in "iced water" that is mostly water, which reads several degrees above freezing.
  • Letting the probe touch the bottom or side of the pan during the boiling test.
  • Ignoring altitude and concluding a perfectly good thermometer reads low.
  • Calibrating a leave-in probe while it is still connected to a hot grill.
