Barbecue and grilling glossary

Every term here appears somewhere in the troubleshooting pages. Where a piece of jargon is mostly marketing, this says so.

A

Ash catcher
The removable pan or cup beneath a charcoal grill that collects spent ash. Its real job is airflow: ash that piles up against the bottom vents chokes the fire and is one of the most common reasons a kettle grill will not hold temperature.

B

Bark
The dark, firm crust that forms on the outside of smoked meat as rub, rendered fat and smoke compounds dry and set. Good bark is dry to the touch and does not rub off. Wrapping meat in foil softens bark because it traps steam against the surface.
Bristle-free
A grill brush design that uses no loose wire strands, typically a coiled spring, a wooden paddle or a solid scraper. It exists because loose bristles from conventional wire brushes can lodge in food and cause internal injuries — a documented and recurring emergency-room presentation.
BTU
British Thermal Unit, the measure manufacturers quote for gas burner output. It describes fuel consumption, not cooking performance: a poorly insulated grill with a high BTU rating can easily run cooler than a well-built one with a lower rating. Compare BTU per square inch of cooking surface if you compare at all.

C

Carryover cooking
The continued temperature rise in food after it leaves the heat, caused by energy still moving from the hot exterior toward the cooler center. A thin steak might rise 5°F; a large roast can rise 15°F. Pulling food short of the target and letting carryover finish it is the difference between medium-rare and medium.
Chimney starter
A metal cylinder with a grate partway up that lights charcoal by stacking it above a paper or paraffin ignition source. Convection through the tube brings a full load to ashed-over readiness in 15–20 minutes with no lighter fluid, which removes petroleum taste from the equation entirely.
Creosote
The bitter, tar-like residue left when wood smoke condenses on a cool surface without burning fully. It is what makes over-smoked food taste like an ashtray, and it accumulates inside smokers as a tacky black layer that is itself flammable. Clean, hot combustion and open airflow are the cure.

D

Denier (600D / 1000D)
A measure of the yarn weight used in a woven fabric, quoted on grill covers. Higher denier means thicker fibers and better abrasion and UV resistance. 600D suits sheltered sites; 1000D is worth it where a grill sits fully exposed year-round. Denier says nothing about waterproofing, which comes from the coating and the seams.
Drip tray
The sloped pan under the cooking chamber that channels rendered fat toward a grease cup. When it fills or its drain hardens over, grease backs up into the firebox, which is the direct cause of most grill fires and of rain water pooling inside the cabinet.

F

Flare-up
A sudden flame caused by rendered fat igniting as it drips onto a hot surface. It is not a fault in the grill. Flare-ups are controlled by trimming fat, keeping the grease path clear, and always maintaining an empty zone to move food into. Closing the lid smothers most of them; water spreads them.

I

Indirect heat
Cooking food positioned away from the fuel, so it is heated by circulating hot air rather than radiant flame — essentially using the grill as an oven. It is the only way to cook anything thicker than about an inch and a half through to the center without carbonizing the outside.
IP rating (IP65, IP67)
An ingress protection code. The first digit covers dust, the second water. IP65 means dust-tight and protected against water jets; IP67 adds survival of brief immersion. For a thermometer that gets rinsed under a tap, IP67 is the meaningful threshold — IP65 handles splashes only.

M

Maillard reaction
The reaction between amino acids and reducing sugars that produces browning and hundreds of new flavor compounds. It runs meaningfully above roughly 285°F, which is why a wet surface — stuck at the boiling point of water — never browns. Drying meat before it hits the grate is the cheapest flavor improvement available.
Minion method
A charcoal arrangement in which a small quantity of lit coals is placed on top of or into a larger bed of unlit fuel, so the fire spreads slowly downward and outward. It gives long, steady burns in a bullet or kettle smoker without constant refuelling.

N

NIST-traceable
A claim that a thermometer has been checked against a reference standard whose own calibration chains back to the National Institute of Standards and Technology. It means the accuracy figure has documented provenance rather than being a marketing number. It does not mean the unit will stay accurate — probes still drift and still need periodic checking.

P

PFOA-free
A statement that perfluorooctanoic acid was not used in manufacturing a non-stick coating. PFOA was phased out of consumer cookware production years ago, so the label is now close to universal and tells you very little on its own. What matters more for grill mats and coated grates is the stated maximum service temperature.
Polymerization
The chemical process behind seasoning: oil heated above its smoke point breaks down and cross-links into a hard, plastic-like layer bonded to the metal. It requires a very thin film and real heat. Too much oil or too little temperature leaves a sticky varnish instead, which is why most seasoning attempts fail.

R

Regulator
The device between a propane tank and the burners that steps high tank pressure down to the low, constant pressure a grill needs. Modern regulators contain an excess-flow safety device that restricts gas if it detects a sudden surge — commonly triggered by opening the tank valve quickly. That restriction is the usual cause of a grill that will only reach 250–300°F.
Reverse sear
Cooking a thick cut slowly over indirect heat until it is a few degrees below target, then finishing over maximum direct heat for a short, hard sear. It produces a more even interior than searing first, because the meat spends most of its time at a gentle temperature gradient.

S

Smoke point
The temperature at which an oil begins to break down and smoke visibly. It matters twice on a grill: cooking above it produces acrid flavor, and seasoning requires deliberately going above it so the oil polymerizes. Grapeseed and refined canola sit high; extra-virgin olive oil sits low.
Smoke ring
The pink band just under the surface of smoked meat, formed when nitrogen dioxide from combustion reacts with myoglobin. It is a chemical marker of a particular cooking environment, not a measure of quality or of smoke flavor. The reaction largely stops once the surface passes about 140°F, so the ring is set within the first ninety minutes.
Snake method
A charcoal layout for long, low cooks in a kettle: briquettes arranged in a two-wide, two-high arc around the perimeter, lit at one end so the fire creeps around the ring like a fuse. Wood chunks placed along the snake deliver smoke on a schedule. It can hold 250°F for six hours or more without intervention.
Stall
The long plateau where a large cut of meat stops climbing in temperature, typically somewhere between 150°F and 170°F. It is evaporative cooling — moisture leaving the surface removes heat as fast as the cooker adds it. Wrapping in foil or butcher paper pushes through it; so does simply waiting.

T

Thermal mass
The capacity of a cooker or a cut of meat to absorb and hold heat. High thermal mass — a ceramic kamado, a thick steel offset, a heavy cast-iron grate — means slower response but far greater stability against wind, weather and an opened lid. Thin steel does the opposite.
Thermistor
A temperature sensor built from a semiconductor whose resistance changes sharply with temperature. Thermistors are accurate and inexpensive across the range that matters for cooking, which is why most consumer instant-read thermometers use them. They respond slightly slower than thermocouples and tolerate less extreme heat.
Thermocouple
A sensor made from two dissimilar metals joined at a point, generating a small voltage proportional to temperature. Thermocouples respond very fast and survive extreme heat, which makes them the choice for professional-grade instant-reads and for the flame-sensing safety devices inside gas appliances.
Two-zone cooking
Setting up a grill with a hot direct zone and a cooler indirect zone at the same time, either by lighting only some burners or by banking charcoal to one side. It is the single most useful technique in grilling: it gives you somewhere to sear, somewhere to finish, and somewhere to move food when a flare-up starts.

Vaporizer bars
The angled metal bars, tents or plates that sit between the burners and the grate on a gas grill. They catch dripping fat and vaporize it into flavor compounds while shielding the burners from clogging. When they warp or corrode through, heat distribution goes uneven and flare-ups increase sharply.
Venturi
The narrowing tube at the inlet end of a gas burner where the gas jet draws in combustion air. Its air shutter sets the fuel-to-air mixture, which is what determines flame color. Blue flames mean correct mixture; yellow, lazy flames mean the venturi is partly blocked — spiders and wasps nesting inside are the classic cause.

W

Water pan
A pan of water placed inside a smoker to add thermal mass and humidity. The mass steadies temperature swings, and the humid environment keeps the meat surface damp, which slows cooking, helps smoke adhere and extends the window in which a smoke ring can form.
